This a fantastic recipe for a meal, side dish, or a base to add your personal add-ins. Additionally, it's super quick & easy. What more could you ask for?
INGREDIENTS
2 cups of brown rice
1 15-ounce can of kidney beans, drained
1 14-ounce can of chopped tomatoes
2 tablespoons of minced garlic
2 tablespoons of olive oil
2 teaspoons of turmeric powder, thyme, and cummin
1 1/2 teaspoons of salt
4 cups of hot water
DIRECTIONS
In a small skillet add the garlic and olive oil and cook for 1 minute until fragrant. Add all the ingredients to a rice cooker and cook until done. I used auto on my combination Instant pot/rice cooker and it took about 30 minutes.
