Spinach and Cheddar Frittata

Need dinner in a flash? Try this cheesy frittata made easy with store-bought shredded cheese and a bag of pre-washed spinach (just rinse at home). This is a healthier version of quiche Lorraine.

Ingredients

4 large Egg(s)

2 large Egg white(s)

1 cup(s), fresh spinach, baby leaves, chopped

2 Tbsp, finely chopped Uncooked scallion(s)

¼ tsp  Table salt

¼ pinch Black pepper

½ cup(s) Low-fat shredded cheddar cheese

Instructions

  1. Preheat oven to 200°C (400°F). Beat together eggs and egg whites in a large bowl. Stir in spinach, scallion, salt, and pepper.
  2. Coat a 30cm (12-inch) in an ovenproof, nonstick skillet with cooking spray. Heat skillet over medium heat. Pour egg mixture into skillet and cook for 5 minutes or until partially set.
  3. Sprinkle cheese over eggs. Bake until cheese softens and eggs firm up about 5 minutes. Remove from oven and let stand 1 minute before cutting in 8 wedges.

Yields 2 pieces per serving.
